While I still disagree, I could see where there is some bit of credibility in the "I don't wish to endorse thru my actions what you are celebrating" position of the 2nd scenario, but in the 3rd one, it is just a customer who happens to be transgender ordering a birthday cake, it would clearly be a case of discrimination, not a desire "not to participate or endorse".
The misunderstanding generated in this discussion derives from the fact that the OP neglected to say that the issue of education concerns young-earth creationists, i.e. those whose beliefs are obviously debunked by science. It has been clarified in the comments by Heyo.
